corn fritters

1/2 c milk
2 eggs, separated   
1 tbsp melted shortening
1 tsp salt
1/3 c sugar
2 c kernel corn
2 c AP flour
3 tsp baking powder

Add milk, beaten egg yolks, shortening, salt and sugar to corn. Sift flour with baking powder, then add to first mixture. Fold in well beaten egg whites. Drop by tbsp into deep fat heated to 375F. Drain.

frosted chocolate doughnuts

2 1/2 c flour
4 tsp baking powder
1 tsp salt
1/2 c sugar
1 tsp vanilla
1 tbsp vegetable oil
2 tbsp cocoa
1/4 tsp cinnamon
2 well beaten eggs
1/3 c milk

Heat deep fat to 370F.

Sift flour, baking powder, salt, sugar, cocoa and cinnamon. Combine eggs, milk, vanilla and vegetable oil. Make a well in dry ingredients and add liquids. Combine well; turn onto floured board and knead until smooth. Divide into 2 portions; roll each into 9X5" piece, then then into 1/2" strips (18). Twist and form a ring. OR Roll to 18x10" and cut for doughnuts.

2 c sifted XXX sugar
2 tbsp cocoa
1/2 tsp vanilla
4 tbsp boiling water
Sift dry ingredients together. Stir in vanilla and add boiling water to make thin icing. Dip doughnuts.

3 1/2 c sifted AP flour
5 tsp baking powder
1 1/2 tsp salt
1/2 tsp nutmeg
2 tbsp butter
2 eggs
1/2 c sugar
2/3 c milk
1/2 tsp cinnamon
1 tbsp lemon juice

Preheat deep fat to 370F.

Mix Method #1 - Sift together flour, baking powder, salt and nutmeg. Cream butter and blend in sugar. Add eggs; beat well. Add dry ingredients to creamed mixture alternately with milk to make stiff dough. On floured surface roll dough 1/3" thick and cut with floured cutter. Fry, drain, shake in bag with XXX sugar or frost.
Mix Method #2 - Sift dry ingredients. Combine eggs (beaten), sugar, lemon juice, melted butter and milk. Blend in dry ingredients, mix well. Knead lightly on floured surface and press out gently. Makes about 24
