Add milk, beaten egg yolks, shortening, salt and sugar to corn. Sift flour with baking powder, then add to first mixture. Fold in well beaten egg whites. Drop by tbsp into deep fat heated to 375ºF. Drain.
Heat deep fat to 370ºF.
Sift flour, baking powder, salt, sugar, cocoa and cinnamon. Combine eggs, milk, vanilla and vegetable oil. Make a well in dry ingredients and add liquids. Combine well; turn onto floured board and knead until smooth. Divide into 2 portions; roll each into 9X5" piece, then then into 1/2" strips (18). Twist and form a ring. OR Roll to 18x10" and cut for doughnuts.
Preheat deep fat to 370ºF.Mix Method #1 - Sift together flour, baking powder, salt and nutmeg. Cream butter and blend in sugar. Add eggs; beat well. Add dry ingredients to creamed mixture alternately with milk to make stiff dough. On floured surface roll dough 1/3" thick and cut with floured cutter. Fry, drain, shake in bag with XXX sugar or frost.
