Toast nuts in 325°F oven until light brown. Beat whites until soft peaks form. Fold in sugar and salt. Fold nuts into whites. Melt butter in 15x10" jelly roll pan and spread nut mix over butter. Bake slowly 30 min, stirring with spatula every 10 min or until nuts are coated with a brown covering and no butter remains in the pan. Cool, separate nuts and store in cool place or fridge. Makes 4 cups
Simmer butter, spices, Worcestershire, Tabasco and garlic together for a few minutes, then toss with the nuts. Spread on a cookie sheet and bake at 300°F for 10 minutes. Stir the nuts around, then bake for an additional 5-10 minutes. Cool and refrigerate. Freezes well.
